Healthy Pickle Chicken Salad Stuffed Bell Pepper Recipe

Healthy pickle chicken salad stuffed bell peppers was made for dill pickle lovers!  This easy chicken salad recipe is made with baked chicken, loads of crunchy pickles, sweet and juicy bell peppers, and the easiest dilly sauce. Stuffed into fresh bell peppers for a healthy, protein packed, and colorful meal that’s perfect for meal prep!

Ingredients

  • Preheat oven to 400 degrees F.  Add the chicken breast into a large baking dish, and spread the oil on both sides of the chicken.  Sprinkle with a little sea salt and pepper, and bake for 30-35 minutes, or until the internal temperature of the chicken reaches 165 degrees F.
  • Remove the chicken from the oven when done, and set aside to cool slightly.  When cooled to the touch, dice into bite-size pieces and add to a large bowl.  Add the diced pickles and green onion.
  • Dice 1 bell pepper into bite-size pieces and add into the bowl with the chicken.
  • Slice the remaining bell peppers in half lengthwise, remove the seeds and core, and set aside to use for serving.
  • In a small bowl mix together the mayonnaise, yogurt, pickle juice, mustard, dill, sea salt, and pepper.
  • Pour the dilly sauce over the chicken mixture and stir until fully combined.
  • Add the pickle chicken salad to the prepared bell peppers, and enjoy!
