High-Protein Red, White and Blue Cottage Cheese Parfait

This festive cottage cheese parfait is a healthy, high-protein breakfast layered with fresh strawberries, creamy whipped cottage cheese, naturally blue butterfly pea flower cottage cheese, and blueberries. With 33g of protein per serving, it's the perfect make-ahead recipe for the 4th of July, summer brunches, or an easy nourishing snack!
Add the cottage cheese and vanilla protein powder to a food processor or mini blender. Blend cottage cheese until completely smooth and creamy.
Spoon half of the cottage cheese mixture into a separate bowl. Blend in the butterfly pea flower powder until evenly blue.
Layer the parfaits in 2 serving glasses or jars:- Diced strawberries- Vanilla whipped cottage cheese- Blue whipped cottage cheese- Fresh blueberriesRepeat the layers if using taller jars.
Enjoy immediately or refrigerate until ready to serve. These are delicious served cold!
