1lbshrimp, medium deveined and peeled (if using frozen follow defrost instructions on package)
2tbsplemon juice
1tbspextra virgin olive oil
1tbspdried chives
1/2tspgarlic granules
1/2tspsea salt
1/2tbspavocado oil for cooking

Instructions
Bring grill pan to medium-high heat.
As the pan heats, add the shrimp, lemon juice, extra virgin olive oil, dried chives, garlic granules and sea salt to a bowl. Stir to combine. (Do not allow the shrimp to marinate more than 5 minutes in the lemon juice as it begins to cook it.)
Divide the shrimp evenly onto 8 skewers.
Add the avocado oil to the pan. Cook shrimp for 3-4 minutes on one side, flip and cook for 2-3 minutes on the other side. Do not over cook. You are looking for the pink to go away and the shrimp to firm up and turn white. Once white the shrimp is done quickly get it off the heat. Cook up any remaining skewers.
