Green matcha whoopie pies are a fun and delicious treat for Saint Patrick’s Day or any time of year. Mixed in one bowl, and naturally colored with green tea powder, these matcha pie cookies should be added to your list to make! Gluten-free too!
Preheat the oven to 350 degrees F. Line 2 large baking sheets with parchment paper.
In a large bowl add the milk, egg, applesauce, oil, and vanilla extract and mix until fully combined.
Add the dry ingredients, except for the matcha. Mix the flour mixture into the wet fully. Stir in the matcha powder until the entire batter is green-colored.
Using a small cookie scoop, dollop the cake batter onto the prepared cookie sheets. Make sure there is space between the mounds of batter.
Bake for 10-12 minutes, until the cake cookies are set on top, and beginning to look slightly golden at the edges. Cool fully on a wire rack.
Make your sweet filling while the cakes cool to room temperature. I like my honey vanilla buttercream with these! Place the frosting in a piping bag with a large tip, use a resealable plastic bag, or use an offset spatula to spread it.
Now assemble! Take 1 cookie part, and turn it upside down. Spread a generous amount of frosting on the flat side of a cake, and then place the top cookie sandwich-style on the frosting. Repeat with the rest of cakes and make all the green whoopie pies!
