The first thing to do to make this sorbet is to dice 1 of the mini melons into cubes. Place the cubed melon on a parchment paper lined baking sheet and place in the freezer for a couple of hours, until the fruit is frozen solid.
To make your honey simple syrup, add the honey and water into a small pot and warm on low heat until the water is warm. Whisk the honey and water together. When they combine fully, pour the mixture into a jar to cool at room temperature.
To make your sorbet, add the frozen chunks into a high speed blender and pulse until the melon is broken down. The fruit will look dry and airy at this point. Turn the blender on and pour ¾ of the honey simple syrup in as the blender runs.
Scrape down the sides, add the mint leaves, and turn the blender on again. Add the remaining simple syrup if needed to help the sorbet blend, and to get it to a smoother sorbet texture.
Pour the sorbet into a shallow pan, loaf pan, or glass freezer-safe container and place in the freezer for 10-15 minutes.
While the sorbet chills, slice the other mini melon in half and scoop out the seeds.
Remove the sorbet from the freezer. Using an ice cream scoop, scoop the sorbet out and serve in the mini melon halves. Garnish with minced mint and enjoy this easy healthy sorbet recipe!
