My no-bake pumpkin protein balls are the perfect blend of nutritious and yummy, a great option for pairing with your pumpkin spice latte. Into a food processor add the beans, nut butter, maple syrup, pumpkin, protein powder, oat flour, coconut flour, cinnamon, and sea salt. Pulse and puree until everything is combined. Scrape the sides down as needed
Chill the dough for at least 1 hour – this helps it to become less sticky.
After the chill, scoop out heaping tablespoons of the batter and roll into balls. Place on a parchment paper lined sheet.
If you’re making spiders, break pretzel sticks in half and push 8 legs into the ball.
Freeze the pumpkin protein balls while you melt the chocolate.
Melt the chocolate and coconut oil together over a double boiler or in the microwave.
Once melted, drop the protein balls and spiders into the chocolate. Let the excess melted chocolate drip off, place it on parchment paper, and add the candy eyeballs.
