  • To make your almond pulp snack balls, start by adding the dates to the food processor and pulsing until broken down.

  • Next, add the remaining ingredients and pulse until the mixture is combined.

  • Lastly, using 1 tbsp of the mixture at a time, roll into balls. Makes about 2 dozen balls. Store sealed in the fridge.

Notes

If you find your energy ball mixture is a little more wet add, slowly increase the coconut flour 1 tsp at a time.
If you find your energy ball mixture is a little dry and doesn’t hold shape, add a little water, 1 tbsp at a time.
