Sheet Pan Baked Eggs Recipe (Meal Prep Breakfast)

This sheet pan egg bake makes it easy to feed a hungry family at once, no flipping eggs or standing over a skillet required. Prep it ahead for busy mornings, or slice it up for the easiest protein-packed breakfast sandwiches all week long!

Ingredients 

  • 12 eggs
  • 1/4 cup whole milk, or heavy cream
  • 1/2 cup cottage cheese
  • 4 oz mushrooms, sliced
  • 1/2 small red onion, diced
  • 2 tbsp fresh chives, chopped
  • Sea alt & black pepper, to taste
  • Cooking spray or olive oil, for the pan

Instructions 

  • Preheat oven to 350 degrees F. Line a rimmed sheet pan with parchment paper and coat with cooking spray or olive oil.
  • Whisk the eggs, milk, salt, and pepper together in a large bowl until well combined.
  • Whisk in the cottage cheese.
  • Pour the mixture onto the prepared sheet pan.
  • Top evenly with mushrooms, red onion, and chives.
  • Bake 20-22 minutes, until the center is set.
  • Cool a few minutes, then slice into squares and serve.
