  • Use a vegetable peeler to shave long, thin ribbons from the carrots into a large bowl.
  • Into a small bowl, or directly in with the carrots, whisk together the olive oil, rice vinegar, coconut aminos, and maple syrup. Toss to coat.
  • Add green onions and season with salt and pepper.
  • To serve, sprinkle with sesame seeds for that perfect crunch. Enjoy right away, or let it chill in the fridge for 15–20 minutes so the flavors can meld beautifully.
