Use a vegetable peeler to shave long, thin ribbons from the carrots into a large bowl.
Into a small bowl, or directly in with the carrots, whisk together the olive oil, rice vinegar, coconut aminos, and maple syrup. Toss to coat.
Add green onions and season with salt and pepper.
