BBQ Chicken Lettuce Wraps

Made with 9 simple ingredients, these light and fresh BBQ chicken lettuce wraps are packed with protein, lots of vegetables, and delicious flavor!

Paired with a cilantro cucumber sauce to bring all the flavors together. This quick and easy recipe is one you’ll be repeating all year long!

INGREDIENTS: – chicken breasts – avocado oil – sea salt – black pepper – garlic granules – BBQ sauce – mini cucumbers – cilantro – avocado oil mayonnaise – plain yogurt – butter lettuce – red onion

Step 1: Preheat the oven to 400 degrees F. Add the chicken breast into a large baking dish, and spread the oil and seasoning on the chicken. Bake for 25-30 minutes.

STEP 2: Set aside to cool to the touch. Dice the cooled chicken and mix it with the barbecue sauce in a large bowl.

STEP 3: Make the sauce by adding cucumbers, mayonnaise, yogurt, cilantro, and a pinch of sea salt and pepper to a mason jar, and use an immersion blender to make a creamy sauce.

STEP 4:  Build your lettuce cups! Take individual lettuce leaves, add the BBQ chicken, cucumber rounds, and minced red onion, and drizzle the cilantro cucumber green sauce over the top.
