Light & Fresh BBQ Chicken Lettuce Wraps with Cucumber
This is quickly becoming one of my favorite meals for my family! My husband first looked skeptical when I served at it dinnertime, but one bite in and he was hooked.
The tender lettuce, crunchy cucumber, red onions, saucy chicken, and creamy sauce worked so well together. There were so many flavors going on!
My kids think the best part of this meal is how interactive it is! They love building their lettuce cups and adding all the fresh veggies, chicken, and creamy sauce.
It’s an art form you get to enjoy eating!
Can you meal prep this recipe?
Not only are these BBQ chicken lettuce cups great for dinner, but they can be meal-prepped too for a quick and easy grab-and-go lunch option!
All of the vegetables keep well once prepped. Lettuce, red onion, and cucumbers will all keep well once you prep them and put them in individual containers. If there is any moisture on your lettuce, add a paper towel between each leaf.
The Uno Bites™ Nano Cucumbers are bite-sized, perfect for snacking, and have the best crunch! My kids and I adore the flavor and enjoy snacking on them, adding to recipes like this one, or pairing them with a favorite dip like roasted red pepper pesto or kefir ranch dressing!
In addition to having all of the vegetables prepped and in their containers, have the chicken cooked and mixed with the barbecue sauce in its container, along with the sauce ready to go.

How to make barbecue chicken lettuce wraps
Step 1: Preheat the oven to 400 degrees F. Slice the chicken breasts in half lengthwise (this quickens cooking time). Add the chicken breast into a large baking dish, and spread the oil on the chicken. Sprinkle with the garlic powder, sea salt, and pepper, and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165 degrees F. Set aside to cool to the touch.
Step 2: Dice the cooled chicken and mix it with the barbecue sauce in a large bowl.
Step 3: While the chicken cooks, make the sauce by adding 2 mini cucumbers, the mayonnaise, yogurt, cilantro, and a pinch of sea salt and pepper to a mason jar and use an immersion blender to turn the ingredients into a smooth and creamy sauce. You can also use a blender to make the sauce.
Step 4: Slice the remaining cucumbers into small rounds.
Step 5: Build your lettuce cups! Take individual lettuce leaves, add the BBQ chicken, cucumber rounds, and minced red onion, and drizzle the cilantro cucumber green sauce over the top. Add more BBQ sauce if you’d like!
Note – You can also cook the chicken in a large skillet over medium-high heat until cooked through. If you have rotisserie chicken from the grocery store, feel free to use that here!

Chicken breast – This recipe works well with chicken thighs, or could also be made into a vegetarian meal by swapping the meat for chickpeas or black beans.
Avocado oil – In place of avocado oil, olive oil works just as well.
BBQ sauce – Make a quick and easy homemade BBQ sauce with ketchup, brown sugar, and soy sauce. Adjust to your liking. Add a little chili powder to make your homemade sauce have medium heat. You can also swap in Korean barbecue sauce for a fun flavor profile!
Butter lettuce – Look for lettuce leaves that can hold the ingredients well in them. Iceberg lettuce is a good shape and romaine lettuce will give you more of a boat look.
Red onion – Swap in green onions for a more mild lettuce flavor.
Yogurt – Want to make this recipe dairy-free? Use your favorite dairy-free plain yogurt, or increase the mayo to replace the yogurt.
