4 Ingredient Healthy Sweet Potato Frosting – Vegan!

Can you believe a sweet potato can be turned into the most luscious and creamy sweet potato frosting? It’s true! All you need are cooked orange sweet potatoes, coconut oil, maple syrup, and vanilla extract. I’ll show you the easy method that leaves you with a smooth frosting every single time. We love this recipe with dark chocolate cupcakes!

  • Add all of the ingredients to a food processor or high-speed blender and blend until smooth. Transfer to a glass storage container and place in the fridge overnight or for at least 8 hours.
  • After the sweet potato frosting has chilled and becomes firmer, it is ready to use! Spread onto almond flour chocolate cupcakes, chocolate cake, or any dessert that needs a healthy frosting. You can use a piping bag here too!

Notes

If you don’t have already cooked sweet potato here’s how to prep them. Pierce 2-3 sweet potatoes a few times with a fork and place on a parchment paper-lined baking sheet. Bake in a 400-degree F oven for 40-50 minutes, or until a knife can easily poke through the center. After the sweet potato cools slightly, cut it in half, and then mash the tender orange flesh from the sweet potato for the recipe!
