Apple Potato Hash with Sausage

The combination of apple chicken sausage, potato, and diced apple come together for a flavorful and easy-to-make dinner hash. Put an egg on it and have this apple potato hash for breakfast, lunch, or dinner!

Ingredients 

  • 1 tbsp avocado oil
  • 3 red potatoes, diced
  • 12 oz apple chicken sausages, diced
  • 2 green onions, diced
  • 2 cups frozen cut spinach
  • 1 apple, diced
  • ½ tsp paprika
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 4 egg, 1 or 2 eggs per person

Instructions 

  • Preheat a large skillet over medium-high heat with the oil. Add the potatoes that are diced into bite-sized pieces and a pinch of sea salt. Saute for 10-15 minutes, until the potatoes are golden brown and crispy on the outside and soft on the inside.

  • Add in the diced sausage and onion next, and sauté for 5 minutes. Stir in the spinach to defrost.  This will take 2-3 minutes.

  • Lastly, add the diced apple, paprika, sea salt, and pepper. Heat the apples through for a couple of minutes.

  • Add a little oil to the pan and cook the eggs your favorite way. Add the eggs on top of your hash and enjoy!
