The combination of apple chicken sausage, potato, and diced apple come together for a flavorful and easy-to-make hash. Put a fried egg on it and have this potato apple hash for breakfast, lunch, or dinner! This is a great budget-friendly recipe the whole family will love!

Apple potato hash with sausage
Think of this apple potato hash as an outline for SO many flavors. While I’m sure partial to the apple sausage + sautéed apple combo, you can mix it up and use a spicier sausage, or change the potato type and use sweet potato.
In fact, a sweet potato apple hash would be equally good!
Let your mind (and pantry!) run with this one and get creative! It’s a great way to use up what you have on hand.
But before we mix it up and try a sweet potato hash, or spicy sausage hash, first start with this classic combo. The sweet apples work super well together with the potatoes and sausage. To simplify dinner even more, and add extra veggies in, we’re using frozen spinach

This recipe can be fully made in advance, cooled to room temperature, and an airtight container, or individual meal prep containers.
To reheat, add to a skillet over medium heat, or warm in the microwave until heated through.

How to make apple potato hash
- Preheat a large skillet over medium-high heat with the oil. Add the potatoes that are diced into bite-sized pieces and a pinch of sea salt. Saute for 10-15 minutes, until the potatoes are golden brown and crispy on the outside and soft on the inside.
- Add in the diced sausage and onion next, and sauté for 5 minutes. Stir in the spinach to defrost. This will take 2-3 minutes.
- Lastly, add the diced apple, paprika, sea salt, and pepper. Heat the apples through for a couple of minutes.
- Add a little oil to the pan and cook the eggs your favorite way. Add the eggs on top of your hash and enjoy!
Substitutions

Avocado oil – Extra virgin olive oil or coconut oil are good alternatives to use.
Red potatoes – Substitute the red potatoes for yukon gold potatoes, purple skin potatoes, Japanese sweet potato
Apple chicken sausage – Instead of chicken apple sausage, use a spicier sausage to add more heat to the meal. Homemade country breakfast sausage, strips of bacon, or seasoned ground turkey will also work well in this recipe.
Green onion – Red onion would be great sauted and added in. You can also go with an even more mild onion, like chives.
Frozen spinach – Fresh spinach will work well here too! You can also mix up the green vegetable and try out Brussels sprouts, kale, or bell pepper.

Ingredients
- 1 tbsp avocado oil
- 3 red potatoes, diced
- 12 oz apple chicken sausages, diced
- 2 green onions, diced
- 2 cups frozen cut spinach
