Made with 9 simple ingredients, these light and fresh BBQ chicken lettuce wraps are packed with protein, lots of vegetables, and delicious flavor! Paired with a cilantro cucumber sauce to bring all the flavors together. This quick and easy recipe is one you’ll be repeating all year long!
Preheat the oven to 400 degrees F. Slice the chicken breasts in half lengthwise (this quickens cooking time). Add the chicken breast into a large baking dish, and spread the oil on the chicken. Sprinkle with the garlic powder, sea salt, and pepper, and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165 degrees F. Set aside to cool to the touch.
Dice the cooled chicken and mix it with the barbecue sauce in a large bowl.
While the chicken cooks, make the sauce by adding 2 mini cucumbers, the mayonnaise, yogurt, cilantro, and a pinch of sea salt and pepper to a mason jar and use an immersion blender to turn the ingredients into a smooth and creamy sauce. You can also use a blender to make the sauce.
Slice the remaining cucumbers into small rounds.
Build your lettuce cups! Take individual lettuce leaves, add the BBQ chicken, cucumber rounds, and minced red onion, and drizzle the cilantro cucumber green sauce over the top. Add more BBQ sauce if you’d like!
