Instead of going out to a Thai restaurant, make healthy homemade beef pad Thai with this easy recipe! You'll love the flavors in this 30 minutes meal. Rice noodles with stir fry beef, loads of veggies, eggs, and the perfect simple-to-make pad Thai sauce. It's a winner of a dinner you'll want to enjoy on repeat!
Bring a large pot of water to a boil, and cook the rice noodles to al dente. Once done cooking, drain and rinse the noodles in cold water (this will help with sticking). If not using the noodles soon, toss with a little sesame oil to prevent sticking.
While the noodles cook, prepare the pad Thai sauce. In a small bowl combine the pad Thai sauce ingredients. Mix fully and set aside.
Crack the eggs into a bowl and beat slightly. Set aside.
In a large skillet or large wok, heat 1 tablespoon of oil over medium-high heat. Saute the beef for 6-8 minutes, until cooked, then remove from the skillet and set ahead.
In the same skillet, add the remaining oil and add the carrot, bell pepper, and onion. Saute for 8-10 minutes, until the vegetables are slightly softened.
Move the vegetables to the edges of the pan and add the beaten eggs into the center of the pan. Scrambled for 2-3 minutes until cooked, then stir in with the vegetables.
Add the cooked beef and noodles, along with the pad Thai sauce. Stir and warm through for a couple of minutes to allow the flavors to combine.
Serve your beef pad Thai noodles along with the chopped peanuts and a squeeze of lime juice. Enjoy!
