Beef sliders with sweet potato buns are so easy to make in the oven, uber-cute, and taste delicious! The perfect healthy mini burger to add to your weekly rotation. Ready in 30 minutes and can easily be prepped in advance as well!

Ingredients 

Sweet Potato Buns

  • 2 large sweet potato, (look for the roundest sweet potatoes you can find)
  • 1 tbsp avocado oil
  • 1/2 tsp sea salt
  • 1/4 tsp pepper

Instructions 

  • Start by preheating your oven to 425 degrees F. Line 1-2 baking sheets with parchment paper.
  • Let’s prepare the sweet potato buns. Peel the sweet potatoes (optional), slice the sweet potato into even rounds (about 1/4 inch thick), add oil, sea salt, and pepper. Bake for 20 minutes, flip, and bake another 10-15 minutes until the sweet potato rounds are soft on the inside, and slightly crispy on the outside.

  • To make the sliders, combine the beef, egg, oat flour, BBQ sauce, garlic granules, sea salt, and pepper in a bowl. Mix thoroughly and shape into 8 sliders, or to the size of your sweet potato rounds (add a slight indentation to the center of the sliders). Place on a rimmed baking sheet and bake at 425 degrees F for 10-12 minutes, until cooked to your liking.

  • To serve the beef sliders with sweet potato buns, place a sweet potato bun on a plate, add your favorite sauces and veggies, top with the beef slider and another sweet potato bun. Enjoy your cute + tasty sliders!
