Beef sliders with sweet potato buns
I love a good meal plan theme and slider Sunday is becoming a regular in our house. I typically go bun-less and turn my burgers, or sliders, into burger salads.
Today I’m showing you one of my favorite bun options – the sweet potato bun! They are super delicious and quite simple to make!
Sweet potato buns
Have you made sweet potato buns before? Once you try you’ll be hooked!
You simply slice your sweet potatoes into rounds (look for round sweet potatoes to start with), add oil + seasoning and roast until cooked and semi crispy.
You can prep a huge batch at one time and have extra sweet potato buns to use throughout the week!
Plus once you have them prepped, add them to any meal where you’re looking for extra carbohydrates.
White sweet potato and garnet yams work well. However, I prefer white sweet potato because they are a little dryer and get crispier.

Flavorful mini beef sliders
Sliders are simply mini burgers. And mini foods are just cuter, right?!
We’ll combine ground beef with egg, oat flour + seasonings for a flavorful burger patty.
You could definitely grill these up, but they also bake perfectly in the oven. Makes them perfect for cold winter days.
What you’ll need for beef sliders with sweet potato buns
- large round sweet potato
- avocado oil
- ground beef
- egg
- oat flour
- BBQ sauce
- garlic granules
- sea salt
- pepper
How to make mini beef sliders
- Start by preheating your oven to 425 degrees F. Line 1-2 baking sheets with parchment paper.
- Let’s prepare the sweet potato buns. Peel the sweet potatoes (optional), slice the sweet potato into even rounds (about ¼ inch thick), add oil, sea salt, and pepper. Bake for 20 minutes, flip, and bake another 10-15 minutes until the sweet potato rounds are soft on the inside and slightly crispy on the outside.
- To make the sliders, combine the beef, egg, oat flour, BBQ sauce, garlic granules, sea salt, and pepper in a bowl. Mix thoroughly and shape into 8 sliders, or to the size of your sweet potato rounds (add a slight indentation to the center of the sliders). Place on a rimmed baking sheet and bake at 425 degrees F for 10-12 minutes, until cooked to your liking.
- To serve the beef sliders with sweet potato buns, place a sweet potato bun on a plate, add your favorite sauces and veggies, top with the beef slider and another sweet potato bun. Enjoy your cute + tasty sliders!
How to customize your sliders
- Don’t want to use beef? Try ground turkey, chicken, lamb, or bison.
- Don’t want sweet potato buns? Use slider buns or rolls instead.
- Feel free to top your sliders with cheese during the last 2-3 minutes of baking.
- Substitute almond flour for the oat flour to keep them grain-free.
