Snack balls are one of my favorite treats to make with my kids! These 4 ingredient chocolate peanut butter snack balls are naturally sweetened with dates, and taste like such a treat!
3cupspitted dates (soak in water for 1 hour ahead of time if your dates seem dry)
2.5cupsdry roasted peanuts
1/2cupcocoa powder
1tspvanilla extract
pinch of sea salt
2-4tbsp water
Prevent your screen from going dark
Instructions
In a food processor, add the dates and pulse until the dates are broken into pieces and beginning to turn into a paste. You may need to scrape down the sides a few times if the dates get stuck on the blades.
Add the peanuts and pulse until the peanuts are broken down into small bits.
Add the cocoa powder, vanilla extract and a pinch of sea salt and pulse until combined.
Add 2 tbsp water and continue to pulse until the mixtures starts to come together. Add up to 2 tbsp more of water.
Remove from the food processor base and begin to roll snack balls out by the heaping 2 tablespoonfuls. Store in the fridge in a sealed container.
Notes
This makes a large amount of date balls. Simply cut the recipe in half for an amount that is easier to process in the food processor.
