Combine all of the ingredients in a crockpot. Stir and cook on low for 6 hours (or 3 hours on high).
After 6 hours puree the black bean soup in a blender or food processor (in batches) to create a smooth soup, or use an immersion blender in the crockpot.
Serve this pureed soup with your favorite taco toppings like sour cream, fresh cilantro, tortilla chips, lime wedges and diced avocado!
Notes
To make this on the stovetop, heat a large pot to medium heat. Add 1 tbsp avocado oil along with the onion and jalapeno. Saute for 5 minutes, until fragrant. Add the remaining ingredients and simmer for 20 minutes. Blend in the same way as step 2.
