Easy Creamy Black Bean Soup Made in the Crockpot

  • Combine all of the ingredients in a crockpot.  Stir and cook on low for 6 hours (or 3 hours on high).

  • After 6 hours puree the black bean soup in a blender or food processor (in batches) to create a smooth soup, or use an immersion blender in the crockpot.

  • Serve this pureed soup with your favorite taco toppings like sour cream, fresh cilantro, tortilla chips, lime wedges and diced avocado!

Notes

To make this on the stovetop, heat a large pot to medium heat.  Add 1 tbsp avocado oil along with the onion and jalapeno.  Saute for 5 minutes, until fragrant.  Add the remaining ingredients and simmer for 20 minutes.  Blend in the same way as step 2.
