In a large bowl crack the eggs. Add the sea salt, pepper, and chives, and beat the egg mixture with a fork or whisk to combine.
Heat a large skillet or non-stick pan over medium heat. When the pan is hot, add the avocado oil (or melt butter), and then add the beaten eggs. Cook the eggs and stir with a wooden spoon or silicone spatula, being sure to scrape the bottom of the pan as you scramble the eggs. Cook until the eggs are set and scrambled and look like large curds.
