Homemade scrambled eggs with chives are an affordable protein-packed breakfast! They are delicious on their own or added to a big breakfast spread. You’ll find my basic go-to scrambled eggs recipe that is naturally dairy-free, along with lots of different ways to flavor it below!

Easy Homemade Scrambled Eggs With Chives Recipe
Eggs are my favorite breakfast. You can customize them and add a lot of flavor, or keep them super simple with just sea salt and ground pepper.
For this easy recipe, we’re seasoning with fresh chives or dried chives, but the possibilities are unlimited!
I love making a batch of chorizo breakfast burritos to go with these eggs. They’re also great with fresh fruit and avocado toast.
You really can’t go wrong with them!

Eggs are always a part of my easy breakfasts. They are quick to cook and pair wonderfully with so many different breakfast and brunch recipes, especially when crispy bacon is involved.

How to make this delicious recipe
Step 1: In a large bowl crack the eggs. Add the sea salt, pepper, and chives, and beat the egg mixture with a fork or whisk to combine.
Step 2: Heat a large skillet or non-stick pan over medium heat. When the pan is hot, add the avocado oil (or melt butter), and then add the beaten eggs. Cook the eggs and stir with a wooden spoon or silicone spatula, being sure to scrape the bottom of the pan as you scramble the eggs. Cook until the eggs are set and scrambled and look like large curds.
NOTE: Want to cook a small batch for just yourself? Crack 2-3 eggs into a small bowl and follow these same steps.

Want more ways to flavor your fluffy eggs? Eggs are a blank canvas and can be transformed into so many flavors and cuisines.
They pair well with Thai recipes (try peanut sauce on your eggs – YUM!), and Spanish recipes along with some creamy avocado.
Try these other combinations and never get bored at breakfast time!
- Add cream cheese in while cooking your eggs and top it with smoked salmon plus fresh dill.
- When your eggs are almost done cooking move them to the side of the pan and add chopped spinach and feta to finish out the cooking – stir to combine.
- A spoonful of salsa instantly adds flavor to your eggs – top with some sour cream too.
- Make an egg stir fry by adding lots of sautéed veggies and coconut aminos.
How to store
Scrambled eggs are not my favorite to keep as leftovers. With easy recipes like this one, they are best prepared and eaten fresh.
However, if you’re making scrambled eggs for meal prep or breakfast burritos, here’s how to store them!
Once cooled to room temperature, add to an airtight container and keep in the fridge for up to 5 days.
To reheat, warm in an oven until warmed though, or in a skillet. Try not to overcook them when warming or you’ll be left with dry eggs.
Substitutions

Eggs – You can make this recipe with egg whites too! Make sure to use oil or melted butter in the pan to prevent sticking since egg whites stick more easily.
Chives – Both fresh and dried chives work great here. Garlic chives or Chinese chives are both great options. Green onion will work in its place too.
Avocado oil – Use your favorite cooking oil here. Unsalted butter, ghee, and olive oil are all good options. I would not recommend a flavorful oil like sesame oil as it will transfer a lot of that flavor to the eggs.
