Chicken Pomodoro is an easy 30 minute skillet dinner! This simple recipe features tender chicken breast cooked in pomodoro sauce made with grape tomatoes, chicken broth, fresh basil, fresh garlic, onion, and topped with parmesan cheese. Serve as is, or with a side of pasta and steamed vegetables for a healthy, balanced, kid-friendly meal!
Heat a large oven-safe skillet to medium high heat and add 1 tbsp oil. Season the chicken with sea salt, pepper, and garlic powder and add to the hot pan. Sear on both sides for 3 minutes, then remove and set aside.
Reduce the heat to medium heat and add 1 tbsp olive oil, onion, and garlic to the large skillet and saute for 2-3 minutes.
Next, add the grape tomatoes, broth, basil, oregano, maple syrup, sea salt, and pepper. Simmer for 5 minutes, then add the semi-cooked chicken back in. Cover with a lid and simmer for 15-18 more minutes (flipping the chicken halfway through), or until the chicken is fully cooked and the internal temperature reaches 165 degrees f.
Top with fresh parmesan, and extra basil, and serve with pasta, and/or steamed broccoli.
