It’s perfect for a busy night because it’s ready in 30 minutes, can turn into a pasta dish by adding your favorite noodles, and is lighter since we’re making an easy fresh tomato sauce.

This easy skillet chicken pomodoro is quickly becoming our family’s new summertime spaghetti dish.
It’s lighter than a traditional ground beef spaghetti meal, and one we love to serve with spaghetti or angel hair pasta.
It goes really well with steamed broccoli, roasted asparagus, or crispy potato bites.

Fresh tomatoes

These tomatoes are another favorite. Every tomato on the vine had the perfect balance of sweetness and not being over-acidic, which I love when I’m using fresh tomatoes in any homemade sauces.

- fresh basil
- dried oregano
- maple syrup
- freshly grated parmesan cheese
How to make chicken pomodoro

- Heat a large oven-safe skillet to medium high heat and add 1 tbsp oil. Season the chicken with sea salt, pepper, and garlic powder and add to the hot pan. Sear on both sides for 3 minutes, then remove and set aside.
- Reduce the heat to medium heat and add 1 tbsp olive oil, onion, and garlic to the large skillet and saute for 2-3 minutes.
- Next, add the grape tomatoes, broth, basil, oregano, maple syrup, sea salt, and pepper. Simmer for 5 minutes, then add the semi-cooked chicken back in. Cover with a lid and simmer for 15-18 more minutes (flipping the chicken halfway through), or until the chicken is fully cooked and the internal temperature reaches 165 degrees f.
- Top with fresh parmesan, and extra basil, and serve with pasta, and/or steamed broccoli.

Here are two ways to prep this dinner recipe in advance:
- Cook the meal fully and then let it cool completely before storing it in the fridge. Reheat in a skillet when you’re ready to enjoy this meal.
- Cook just the chicken in advance and then make the pomodo sauce fresh. Thinly slice the chicken and nestle it into the sauce as it simmers and dinner is done in under 10 minutes!

Leftover chicken pomodoro can be saved, once cooled, in an airtight container.
Reheat leftovers in a skillet.

Substitutions

Chicken breast – You can use chicken tenders or chicken thighs as an alternative. This recipe also works well with pork cutlets.
Olive oil – Avocado oil works well as a great substitute.
Grape tomatoes – Diced plum tomatoes, fresh roma tomatoes, or even using canned tomatoes are all good substitutes in this recipe.
Onion – Try red onion or green onion for a slight flavor change.
Chicken bone broth – Regular chicken broth or beef broth all work as subs.
Fresh basil – Don’t have fresh basil on hand? Dried basil works as well.
Maple syrup – Honey is a great liquid sweetener substitute. You can also use sugar or coconut sugar as an alternative.
Parmesan cheese – Romano cheese or asiago cheese are really good options here. You can always omit the cheese for a dairy-free alternative.
