Healthy Cinnamon Apple Baked French Toast

Baked apple french toast is made with cinnamon raisin sprouted grain bread and saucy caramelized apples. Each slice of bread is dipped in the French toast batter, arranged in a baking dish, and then topped with warm cinnamon apples. It’s the perfect breakfast or brunch for friends and family during apple season!

Ingredients 

  • 8 eggs
  • 1.5 cups unsweetened almond milk
  • 1/4 cup maple syrup, divided
  • 1 tbsp cinnamon, divided
  • 1 tsp vanilla extract
  • 1 loaf sprouted grain cinnamon raisin bread
  • 4 apples, peeled and sliced
  • 2 tbsp unsalted butter

Instructions 

  • In a large bowl add the eggs, milk, 2 tbsp maple syrup, ½ tbsp cinnamon, and vanilla extract. Whisk well until combined.
  • Preheat the oven to 350 degrees F. Oil a 9" x 13" baking dish lightly with oil or butter. Dip the bread slices in the egg mixture, then place them in the prepared baking dish, layering as you go. Pour the remaining custard over the French toast pieces.
  • In a large skillet over medium heat add the sliced apples, remaining 2 tbsp maple syrup, ½ tbsp cinnamon, and the butter. Stir and cook for 5-10 minutes, until the apples are saucy and slightly cooked.
  • Pour the apple topping over the French toast pieces and cover the entire pan with aluminum foil.
  • Bake for 40 minutes, then remove the foil and allow the French toast to cook for 5-10 minutes, or until puffy.
