In a small bowl combine the sage, sea salt, pepper, onion powder, garlic powder and dried oregano and mix together.
To a large bowl add the ground pork and the sausage seasonings. Mix the pork mixture using your hands until the seasonings are just mixed with the pork. Shape sausage mixture into 6-8 patties.
Heat a large skillet over medium heat. Add the sausage patties into the hot pan and cook for 8 minutes on the first side, and then 5-7 minutes the second, or until the meat is fully cooked through and no longer pink in the center. If you are using a smaller pan cook the patties in small batches to ensure there is enough space.
