This easy recipe mixes together in minutes, and leave you with protein packed, flavorful pork sausage the whole family will adore! All you need for your own sausage at home are 7 simple ingredients that can easily be found at a regular grocery store.

Most breakfast sausage I see at the grocery store is filled with things like MSG, nitrates, and preservatives. When you’re trying to avoid those things like we do in our household, sometimes you just need to make it from scratch to get what you want.

Lucky for you (and me!), homemade breakfast sausage patties are incredibly easy to make.

You start with plain ground pork and mix in the spice mixture well.

Once you have your own breakfast sausage mixed up, all you have to do is form patties and cook them up.

Serve with pancakes, fruit, whole wheat drop biscuits, cinnamon apple french toast bake, or whatever else you are having at breakfast time!

Can you prep this country sausage recipe in advance?

Yes!

Pre-cooking breakfast sausage is a great way to speed up breakfast prep.

You can double or triple the recipe and then easily have delicious protein ready to use in the mornings.

Shape into patties per the instructions, or turn it into a bulk sausage that you can cook up like a taco meat and add into omelets, breakfast casseroles, or to add to egg scrambles.

It’s also the best sausage to add into a sausage gravy!

How to make a homemade sausage patty

  1. In a small bowl combine the sage, sea salt, pepper, onion powder, garlic powder and dried oregano and mix together.
  2. To a large bowl add the ground pork and the sausage seasonings. Mix the pork mixture using your hands until the seasonings are just mixed with the pork. Shape sausage mixture into 6-8 patties.
  3. Heat a large skillet over medium heat. Add the sausage patties into the hot pan and cook for 8 minutes on the first side, and then 5-7 minutes the second, or until the meat is fully cooked through and no longer pink in the center. If you are using a smaller pan cook the patties in small batches to ensure there is enough space.

Change up the flavor

If you’re a fan of breakfast sausage seasoning that has a touch of sweetness, feel free to add in 1-2 tablespoons of pure maple syrup or brown sugar.

The sweet sausage and savory combo is quite good!

To add a spicy flavor, add in 1-2 teaspoons of red pepper flakes, sriracha or minced jalapeño in for some heat.

A touch of cayenne pepper will do the trick too to make it a spicy sausage!

How to store

Leftover breakfast patties keep well in the fridge for 5 days.

Allow them to fully cool before adding to an airtight container. You can also store in a bowl covered in plastic wrap. Just ensure that air isn’t being let in to ensure it stays fresh in the fridge.

How to freeze

Freezing healthy breakfast sausage works really well! Allow the patties to fully cool before adding into a freezer bag.

Label and date the bag, then freeze for up to 6 months.

To defrost from the freezer, place the desired amount of sausage patties in the fridge overnight. You can also warm frozen patties in the microwave, or on a skillet over low heat.

Substitutions

Ground pork – This pork breakfast sausage can very easily be turned into turkey or chicken breakfast sausage! Swap in different ground meat like lean ground turkey and ground chicken to use a lean meat in place of the pork. You can also use ground beef here too.

Dried oregano – Try swapping in rosemary for the oregano for a new flavor option.

I’ve been making almost the same recipe for years, I recommend swapping out the oregano for rosemary. The possibilities are endless.
