This healthy Mediterranean hummus wrap recipe is such an easy, healthy lunch! Loads of healthy fresh veggies, creamy hummus, protein-packed chicken, and Mediterranean flavors are all wrapped in a portable tortilla.
Start by chopping the vegetables and combining them with feta cheese, and lemon juice.
To make each wrap, spread a layer of hummus along the center of the tortilla. Add the vegetable-feta mixture, then the chicken. Roll into a closed wrap and enjoy! To make in advance, simply prep and wrap the whole wrap in parchment paper. Secure with a rubber band or tape.
