Healthy Peanut Butter Powder Cookies Recipe

Let the obsession begin – this are the best peanut butter powder cookies recipe! All the peanut butter flavor wrapped into a healthy cookie.  It is mixed in 1 bowl, and made with 7 simple ingredients.  If chocolate and peanut butter together are your thing, don’t skip the easy 2 ingredient chocolate coating!

Instructions 

  • Preheat the oven to 350 degrees F.  Line a baking sheet with parchment paper.
  • In a large bowl add the water and powdered peanut butter.  Whisk together to combine.
  • Into the same bowl, add the maple syrup, vanilla extract, and peanut butter and mix the wet ingredients fully.
  • Next, add the oat flour, protein powder, and baking powder and stir together until the dry ingredients are fully combined.
  • Spoon batter with a cookie scoop or spoon to the prepared cookie sheet.  Roll into ball, and then flatten with your hand.  There should be 6-8 cookies. Use a fork to press in a crisscross pattern for a regular peanut butter cookie look, or simply smooth and press down.
  • Bake in the preheated for 9-11 minutes, or until the peanut butter cookie dough looks set and golden.
  • Allow cool to room temperature on a wire rack.  Enjoy as is, or dip in melted chocolate!
  • To add a chocolate coating, melt the chocolate chips and coconut oil together.  Dip half of the cookie into the chocolate
  • Cool on a wire rack until the chocolate is set. For quicker cooling, chill the cookies in the fridge. Enjoy!
