Homemade Sour Watermelon Gummies with Collagen

These homemade watermelon gummies are made with fresh watermelon, bright lime juice, and a boost of gelatin + collagen for extra protein and that classic bounce!

  • Blend the watermelon until smooth. Strain through a fine sieve – you’ll have about 2–2½ cups juice. Divide into two bowls: hot half and cold half (roughly equal).
  • Whisk gelatin + collagen into the cold watermelon juice and let sit 3–5 minutes to bloom (it will look thick and spongy).
  • In a small saucepan, heat the hot watermelon juice with lime juice (and honey, if using) over medium-low until steaming - not boiling.
  • Add the bloomed gelatin/collagen into the hot watermelon juice. Whisk patiently until completely dissolved and silky (1–2 minutes).
  • Pour into mini watermelon silicone molds (or a pan). Refrigerate until set, 2–3 hours. Pop out or cut into squares. Makes about 75 bite-size gummies.

Notes

For sour patch vibes: Right before serving, lightly coat the set gummies in a blend of superfine cane sugar and citric acid for a sweet-tart finish. If you prefer a natural option, use finely grated lime zest instead for a bright, zippy twist.
