Easy Homemade Sour Watermelon Gummies with Collagen

My kids are obsessed with these watermelon gummies – they call them “mini watermelons” and ask for them after school every day. I love that they’re made from fresh fruit and set with gelatin, so they sneak in a little protein boost with every bite.

The added collagen peptides increase the protein, making them more satisfying than regular candy, which keeps everyone happier between meals.

Win-win: they get a fun treat, I get a fridge full of better-for-you snacks.

  • Watermelon chunks (seedless) – Use ripe, sweet watermelon for the best flavor. Blend the chunks until smooth, then strain through a fine-mesh sieve to remove pulp and foam. You’ll be left with a bright, refreshing juice that forms the base of these gummies.
  • Unflavored gelatin – This is the key ingredient that gives the gummies their structure and bouncy texture. Look for grass-fed gelatin for a high-quality option. Be sure to sprinkle it evenly over the liquid to let it “bloom” before heating.
  • Collagen peptides – Collagen not only adds a little extra protein but also gives the gummies a soft, springy chew. It dissolves easily and contributes to that satisfying texture without making the gummies too firm.
  • Fresh lime juice – Lime juice balances the natural sweetness of the watermelon and adds a bright, tangy flavor. Freshly squeezed is best, since bottled juice can taste slightly bitter.
  • Honey (optional) – Depending on how sweet your watermelon is, adjust the honey to your liking. Start with 1 tablespoon, then taste and add more if needed. Raw or local honey works beautifully and adds a hint of floral depth.

How to make gummies sour watermelon flavor

Step 1: Blend the watermelon until smooth. Strain through a fine sieve – you’ll have about 2–2½ cups juice. Divide into two bowls: hot half and cold half (roughly equal).

Step 2: Whisk gelatin + collagen into the cold watermelon juice and let sit 3–5 minutes to bloom (it will look thick and spongy).

Step 3: In a small saucepan, heat the hot watermelon juice with lime juice (and honey, if using) over medium-low until steaming- not boiling.

Step 4: Add the bloomed gelatin/collagen into the hot watermelon juice. Whisk patiently until completely dissolved and silky (1–2 minutes).

Step 5: Pour into mini watermelon silicone molds (or a pan). Refrigerate until set, 2–3 hours. Pop out or cut into squares. Makes about 75 bite-size gummies.

NOTE: Right before serving, lightly coat the set gummies in a blend of superfine cane sugar and citric acid for a sweet-tart finish. If you prefer a natural option, use finely grated lime zest instead for a bright, zippy twist.

Tips & variations

  • Sour patch copycats vibe: Toss set gummies in a mix of superfine cane sugar + citric acid (or extra lime zest) right before serving. Pucker up!
  • Extra punchy color: Add 1–2 Tbsp strained beet juice – flavor stays watermelon, color pops even more.
  • Just cubes: No molds? Set in a lined pan and slice into ¾-inch squares.

​Best way to store

Store the recipe in an airtight container in the fridge for up to seven days. This helps maintain freshness and keeps the flavors at their best.

For the best texture, make sure they stay cold and dry — placing a paper towel in the container can help absorb any excess condensation.

These are not freezer-friendly, so enjoy them fresh from the fridge within the week for optimal taste and texture.

Substitutions, optional variations & dietary adjustments

Below you’ll find a list of substitutions that will work well in this homemade watermelon gummy recipe.

Watermelon – No watermelon? Try strawberries, raspberries, or mango instead. Blend and strain for a smooth, fruity base with a slightly different – but equally delicious flavor.

Lime juice: Use lemon juice, same amount.

Honey: Maple syrup works; start with 1 Tbsp and adjust to taste.

Collagen peptides: You can omit if not available. Your gummies will be a bit firmer – keep the gelatin amount the same.

Gelatin: Plant-based gels (agar) behave differently – only swap if you’re comfortable testing; start with ~2–3 tsp agar powder and simmer to activate.
