Meet my new favorite jerk salmon recipe! The jerk salmon salad with mango jalapeño dressing - yum! This healthy salmon salad is loaded with flavor, thanks to the jerk seasoning, and the mango jalapeño dressing. Add in green veggies, black beans, avocado, and mango, and you are set for an elegant, tropical, and complete meal. So yummy and simple to make!
1cupmango, diced (fresh or frozen, simply defrost first)
2cupsblack beans

Pre-heat the oven to 400 degrees F.
Line a baking sheet with parchment paper. Add the salmon onto the baking sheet and brush the oil between the pieces. Mix the sea salt, nutmeg, clove and allspice together in a small bowl, then sprinkle evening over the salmon. Gently press the seasoning in.
Bake the salmon for 11-13 minutes, or until the salmon is just cooked through (not bright pink in the center).
Make the dressing. Add the mango, lime juice, vinegar, mustard, cilantro, jalapeño, and sea salt into a blender, and blend until smooth. Taste the dressing, and stir in the maple syrup (use less or more to taste).
Build your jerk salmon salads by dividing the spring greens, micro greens, avocado, mango, and black beans between 4 bowls. Add the salmon, and drizzle with the mango jalapeño dressing. Enjoy!
