These healthy protein cookie dough bites are made with just 7 ingredients and are so delicious! You’ll love that these little protein bites give you 5 grams of protein, plus great healthy fats from the almond flour and peanut butter. Lower in sugar than your average cookie dough, and made with better for you ingredients. Let’s get to them!
In a large bowl add the almond milk, maple syrup, vanilla and peanut butter together. Mix it all together then add the rest of the ingredients – almond flour and protein powder. Mix until combined, then press the cookie dough using a spoon or cookie scoop into a silicone mini muffin mold (or the cookie dough mold pictured). Place in the freezer.
While the protein energy bites chill in the freezer, melt the chocolate chips and coconut oil together. Pour or drizzle the melted chocolate onto the cookie dough bites and place back into the freeze for 3-4 hours until fully firm.
