The main ingredient you’ll find in these yummy bites is almond flour, plus a little protein powder, creamy peanut butter, and maple syrup.

The combination of those 4 ingredients plus some mini chocolate chips gives them all the cookie dough vibes.

I could enjoy eating it straight from the bowl, but freezing the dough into little bites makes them extra good!

The dough is a bit sticky, so freezing helps it to be less sticky.

Plus, a freezer treat means you’ll always have a yummy low carb dessert on hand that doubles as a post-workout snack!

Healthy Low Sugar Freezer Protein Cookie Dough Bites

No special equipment needed – No food processor or blender is needed for this recipe! It mixes easily and quickly in one bowl, making it a great healthy treat to mix up when your sweet tooth wants something yummy, but you also want to get more protein and nourishment in with your treat.

Easy healthy snack to meal prep – The hardest part of this recipe is waiting for it to freeze, but you could totally eat it as actual cookie dough!

How to make the perfect snack

Step 1: In a large bowl add the almond milk, maple syrup, vanilla and peanut butter together. Mix it all together then add the rest of the ingredients – almond flour and protein powder. Mix until combined, then press the cookie dough using a spoon or cookie scoop into a silicone mini muffin mold (or the cookie dough mold pictured). Place in the freezer.

Step 2: While the protein energy bites chill in the freezer, melt the chocolate chips and coconut oil together. Pour or drizzle the melted chocolate onto the cookie dough bites and place back into the freeze for 3-4 hours until fully firm.

How to store

These yummy bites keep best in the freezer. The dough is pretty sticky, so if it’s left in the fridge the texture won’t be as good.

I suggest storing them in the freezer and if you want them a little soft before biting into them, place as many as you’d like to enjoy on the counter at room temperature for 5 minutes. Total perfection!

They will last in the freezer for up to 6 months when stored properly.

Substitutions, optional variations & dietary adjustments

Below you’ll find a list of substitutions that will work well in this chocolate chip cookie dough protein bites recipe.

Unsweetened almond milk – You can use your favorite type of non-dairy milk here.

Maple syrup – Honey or agave nectar are both great alternatives to maple syrup.

​Peanut butter – Any type of nut butter or seed butter will work in place of peanut butter! Just be sure you enjoy the taste of the nut butter you choose to use as that will flavor these energy bites a lot.

Almond flour – I’ve made these multiple times with cashew flour and it works great! Other nut flours like pecan flour or walnut flour should work great here as well.

Vanilla whey protein powder – You can opt to use a different flavor of protein powder – whatever flavor you like! If you want to use a plant-based protein powder you can, but you’ll have to add a bit more liquid as vegan protein powders tend to absorb more liquid.

Mini chocolate chips – Regular dark chocolate chips work here as well!
