Mocha Chocolate Chip Muffins

Hello delicious healthy mocha chocolate chip muffins! The pairing of chocolate with a hint of coffee (decaf if you’re making these for kiddos!!), is quite amazing! These healthy muffins are naturally sweetened with a little maple syrup and applesauce, they are totally oil-free, are gluten-free, and still incredibly moist muffins! Coffee brings out the chocolate flavor even more, which makes these treats even more chocolatey. There’s definitely nothing wrong with that!

  • Pre-heat your oven to 350 degrees.  Line 9 muffin holes with paper or silicone liners
  • In a large bowl combine the almond flour, coconut flour, cocoa powder, baking soda, sea salt).  Stir until thoroughly mixed, leaving no lumps.
  • Add the apple sauce, maple syrup, egg, coffee, and vanilla and stir to combine. Stir in the chocolate chips.
  • Add the muffin batter into 9 regular sized muffin tins.  Top each muffin with a few additional chocolate chips if desired.
  • Bake for 20-22 minutes.  Remove from the oven when a toothpick comes out clean.  Allow the muffins to cool before eating.
