These chocolate protein popsicles are rich, creamy, and packed with 12 grams of protein each! Made with cottage cheese, chocolate protein powder, peanut butter, cocoa powder, and almond milk, they're an easy no-added-sugar treat that's perfect for summer snacking, meal prep, or post-workout fuel.
Add the cottage cheese, chocolate protein powder, peanut butter, cocoa powder, and almond milk to a high-speed blender. Blend until completely smooth and creamy, scraping down the sides as needed.
Pour the mixture evenly into silicone popsicle molds, leaving just a little room at the top for expansion as they freeze. Insert a popsicle stick into each mold.
Freeze for at least 4-6 hours, or until completely firm.
To remove the popsicles, run the outside of the popsicle molds under warm water for a few seconds until they easily release.
For an extra indulgent finish, drizzle each popsicle with melted dark chocolate and sprinkle with chopped peanuts. Place them on parchment paper for a minute or two until the chocolate hardens before enjoying.
