Peanut Butter Fig Bars

These no bake peanut butter fig bars could not be easier to make! Simply mix all the ingredients together, press into a loaf pan, chill in the fridge and cut into bars. They are super chewy, naturally sweetened with a little honey, studded with seeds, dried figs and mini chocolate chips (if you want). Make a batch today and enjoy a sweet and delicious snack all week long (if they last that long!)

Instructions 

  • Prepare a loaf pan by lining with parchment paper. If using a silicone loaf pan, skip this step.
  • In a bowl, combine the oats, pumpkin seeds, dried figs, coconut, cinnamon, sea salt and chocolate chips (if using). Stir to combine.
  • Add in the peanut butter, honey, coconut oil and vanilla. Stir until all the ingredients are fully combine. Press into the loaf pan, and chill in the fridge for about 30 minutes to harden. Cut into 8 bars. Keep the bars stored in the fridge until ready to eat. Enjoy!
