Pizza stuffed bell peppers are a great use for extra bell peppers! The filling takes my taste buds right to Friday night pizza night. But instead of a crispy crust, we’re enjoying roasted bell peppers! More veggie. More goodness.
Prepare the large peppers by removing the tops, stems, and seeds. Place bell peppers on a baking sheet lined with parchment paper or a large baking dish and rub a little bit of oil over them. Bake bell peppers for 15 minutes. Prepare the filling while the peppers bake.
Heat a large skillet over medium heat and add the avocado oil. Saute the ground turkey and onion together, stirring with a wooden spoon every couple of minutes. Saute until the ground turkey is fully cooked.
Add the garlic granules, oregano, sea salt, and pepper, cook brown rice, pizza sauce, and half the mozzarella cheese. Stir to fully combine the pizza flavors.
When the bell peppers have been in the oven for 15 minutes, remove and add the filling to each pepper. Top with remaining cheese and bake for 15 additional minutes.
When the pizza stuffed peppers are done, serve with a little parmesan cheese, red pepper flakes, black olives, or your favorite pizza toppings!
