Pizza Stuffed Bell Peppers

Pizza stuffed bell peppers are a great use for extra bell peppers! The filling takes my taste buds right to Friday night pizza night. But instead of a crispy crust, we’re enjoying roasted bell peppers! More veggie. More goodness.

Ingredients

  • Preheat the oven to 400 degrees F.
  • Prepare the large peppers by removing the tops, stems, and seeds. Place bell peppers on a baking sheet lined with parchment paper or a large baking dish and rub a little bit of oil over them. Bake bell peppers for 15 minutes. Prepare the filling while the peppers bake.
  • Heat a large skillet over medium heat and add the avocado oil. Saute the ground turkey and onion together, stirring with a wooden spoon every couple of minutes. Saute until the ground turkey is fully cooked.
  • Add the garlic granules, oregano, sea salt, and pepper, cook brown rice, pizza sauce, and half the mozzarella cheese. Stir to fully combine the pizza flavors.
  • When the bell peppers have been in the oven for 15 minutes, remove and add the filling to each pepper. Top with remaining cheese and bake for 15 additional minutes.
  • When the pizza stuffed peppers are done, serve with a little parmesan cheese, red pepper flakes, black olives, or your favorite pizza toppings!
