Meal prep has been magic in my kitchen lately. Even though I am a stay-at-home mom with little kids in the house, I love being prepared and not rushed when it comes to getting dinner to the table.

I even love meal prep for breakfast + lunch!

I am basically just a fan of being more prepared and less frazzled. You?

This pizza stuffed bell peppers can easily be added to your meal prep routine in a few different ways. Here’s how:

How to save more time making this pizza stuffed pepper recipe

You don’t have to make the entire meal ahead of time. Here are a few different components you could prep ahead of time when you have a few extra minutes in the kitchen. Whether you do a big meal prep one afternoon, or little bits each time you’re in the kitchen, make it work for you!

  • Cook the ground turkey ahead of time
  • Ensure you have leftover rice on hand
  • Prepare your bell peppers so they’re oven ready
  • Shred the cheese

Pizza stuffed bell peppers reheat beautifully, so if you decide to make them fully ahead of time, know they’ll be just as delicious when you reheat them in the microwave or oven (whatever your preference is).

Will the whole family like this recipe?

Do your kids enjoy cooked bell peppers? I know that my 3 older kiddos really do not enjoy them. Anytime we have fajitas they balk at the sight of cooked bell peppers. Give them raw bell peppers and they’ll eat them all day!

Even though I know they won’t be excited about the cooked peppers, I still serve them.

I encourage them to try a bite and then just eat the filling out of the bell pepper with a fork.

I also serve these dinners that are new or they may not be excited about with fruit or a side they like. Fruit is always a great choice for us.

The key thing I want to share here is that they’re being exposed to it.

Maybe cooked bell peppers aren’t their favorite today, but one day when they try it again, their taste buds may change, and I want them to continue to have the opportunity to try these foods and be exposed to them.

How to make healthy pizza peppers

  1. Preheat the oven to 400 degrees F.
  2. Prepare the large peppers by removing the tops, stems, and seeds. Place bell peppers on a baking sheet lined with parchment paper or a large baking dish and rub a little bit of oil over them. Bake bell peppers for 15 minutes. Prepare the filling while the peppers bake.
  3. Heat a large skillet over medium heat and add the avocado oil. Saute the ground turkey and onion together, stirring with a wooden spoon every couple of minutes. Saute until the ground turkey is fully cooked.
  4. Add the garlic granules, oregano, sea salt, and pepper, cook brown rice, pizza sauce, and half the mozzarella cheese. Stir to fully combine the pizza flavors.
  5. When the bell peppers have been in the oven for 15 minutes, remove and add the filling to each pepper. Top with remaining cheese and bake for 15 additional minutes.
  6. When the pizza stuffed peppers are done, serve with a little parmesan cheese, red pepper flakes, black olives, or your favorite pizza toppings!

Substitutions

Below you’ll find a list of substitutions that will work well in this healthy lifestyle bell pepper pizzas recipe.

Avocado oil – Coconut oil, olive oil, or ghee all work as substitutes for cooking.

Lean ground turkey – Ground chicken, lean ground beef, or ground hot Italian sausage are all good meat options. To add even more pizza flavor you can add pepperoni slices or turkey pepperoni.

Onion – Red onions, white onions, and yellow onions all work well in this recipe. For a more mild onion flavor, opt for green onion.

Garlic granules – Garlic powder fresh garlic, or roasted garlic will work here. Onion powder is another good alternative.

Dried oregano – Replace dried oregano with Italian seasoning or dried basil.

Brown rice – Cooked white rice, quinoa, or cauliflower rice for a low carb option work well as substitutes.

Pizza sauce – Try using marinara sauce, tomato sauce, or homemade tomato paste pizza sauce will all work!

Mozzarella cheese – Parmesan cheese or a cheese mix for pizza will work as a substitute

Bell peppers – Any color of bell pepper will work here. For bite-size appetizers, individual portions are a really fun way to serve them, use mini bell peppers and slice them into pepper halves.
