Place the shelled pistachios in a food processor and start blending. Blend for 3-5 minutes, scraping the sides down once.
Once the pistachios have broken down into a fine crumb and may be starting to clump, add the coconut oil and vanilla. Blend for 1-2 minutes, scraping the sides down once.
