Salted Vanilla Pistachio Butter

Salted pistachios, coconut oil and vanilla come together for a creamy, oh-so-tasty nut butter combo!  This salted vanilla pistachio butter is a true gem – transform your sandwich to something special, put a dollop on your oats for a protein boost, eat with dates for a sweet and salty combo or sneak a spoonful straight outta the jar – it is that good!

Ingredients 

  • 1 cup shelled salted pistachios
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract

Instructions 

  • Place the shelled pistachios in a food processor and start blending. Blend for 3-5 minutes, scraping the sides down once.
  • Once the pistachios have broken down into a fine crumb and may be starting to clump, add the coconut oil and vanilla. Blend for 1-2 minutes, scraping the sides down once.
  • Store in an air tight container. I love these mini mason jars, but if you make extra, these wide mouth mason jars work great.
  • Store on the counter for up to 1 week, in the fridge any longer than a week.
