This salted vanilla pistachio butter is a true gem – transform your sandwich to something special, put a dollop on your oats for a protein boost, eat with dates for a sweet and salty combo or sneak a spoonful straight outta the jar – it is that good!
This week is flying by! It started out with Jacob gone for work Mon-Wed, and the rest of the week Hunter has half days of Kindergarten plus we have his first parent teacher conference today! I am very much looking forward to having him home a little more and actually getting some quality time with him in the afternoons.
The time after school pick up, filed with sibling bickering, then dinner and bedtime seems to go by so quickly and when it’s just me (when the hubby is traveling), it doesn’t leave me with much time to actually enjoy the kids. All that being said, I am very much looking forward to these next couple of days with more Hunter time! I asked him what he wants to do since he’ll be home early and he said, “just be with you”. Melt my heart!
Anyways, I wanted to hop on and share a super simple recipe that can be as labor intensive as you want. Ever since watching the movie The Gamer sooooo many years back, where pistachio butter was referenced, I’ve had it in my mind to make some. This week I finally did!
I had a big bag of pistachios on hand and Zoe gladly took on shelling most of them for me. Hooray for helpful kids!
You can totally used already shelled pistachios and save a lot of time, but if you need to shell them, have a seat with your kiddos and get to shelling. It’s a great way to slow down and work on a project together. Especially when it ends with something so delicious!
I sent Hunter to school with the most delicious sandwich this week – salted vanilla pistachios butter with strawberry rhubarb jam on honey whole wheat bread, paired with Monterrey jack cheese cubes, grapes and cucumbers! Funny thing – he was not excited at all about the sandwich. He didn’t even eat any at school because he didn’t think he’d like it so after school he finally tried it and guess what – he thought it was so good! It is.
Grab yourself some pistachios, coconut oil and vanilla and get yourself some pistachio butter! This spreadable green nut butter is fun and so delicious. All my pistachio loving friends need to make this right now!
Salted Vanilla Pistachio Butter
- 1 cup shelled salted pistachios
- 2 tbsp coconut oil
- 1 tsp vanilla extract
- Place the shelled pistachios in a food processor and start blending. Blend for 3-5 minutes, scraping the sides down once.
- Once the pistachios have broken down into a fine crumb and may be starting to clump, add the coconut oil and vanilla. Blend for 1-2 minutes, scraping the sides down once.
- Store on the counter for up to 1 week, in the fridge any longer than a week.
