Savory Whipped Cottage Cheese Toast with Tomatoes

Ingredients 

  • 2 cups cottage cheese
  • 1 tbsp lemon zest
  • 1/2 tsp black pepper
  • 1 cup OMG Tomatoes™, cut into quarters
  • 1/4 cup basil, minced, and divided
  • pinch of sea salt
  • 6 slices sourdough bread
  • thyme-infused honey
  • micro greens

Instructions 

  • To a food processor or blender, add the cottage cheese, lemon zest, and pepper. Blend until smooth and creamy.
  • Toast the bread. Mix the tomatoes with 2 tbsp basil and a pinch of sea salt.
  • Now assemble your toasts! Spread a thick layer of the blended cottage cheese on a slice of toast. On top of the cottage cheese add the tomatoes, a drizzle of honey, minced basil, and micro greens (optional). Repeat and enjoy!

Notes

To make thyme-infused honey slightly warm the honey with a few sprigs of fresh thyme. Keep the thyme in for as long as you’d like – the longer it stays the stronger the thyme flavor will be.
