These sheet pan gyros are filled with the most flavorful Greek beef that is easy and quick to prepare. You’ll marinade it, and quickly bake the beef strips in the oven! A stand-out weeknight dinner that’s full of colorful vegetables you’ll want to add to your next menu!
In a large bowl, add the beef. In a small bowl whisk together the avocado oil, lemon juice, sea salt, dried oregano, dried basil, dried mint and pepper. Pour over beef mixture, stir and allow to sit for 30 minutes, and up to 2 hours.
Pre-heat oven to 425 degrees F. Pour beef mixture onto rimmed baking sheet. If the pan is crowded, use 2 pans.
Bake for 15 minutes, or until beef is cooked.
Prepare tzatziki by mixing together the ingredients. Serve beef gyro meat in a pita with tomato, cucumber, feta, red onion, tztaziki sauce and kalamata olive if you enjoy them!
