Sheet Pan Beef Gyros (Easy Weeknight Dinner!)

Sheet pan beef gyros are so full of flavor, and couldn’t be easier. Simply marinade, and quickly bake the beef strips in the oven! A stand out weeknight dinner you’ll want to add onto your next menu (and keep repeating!).

After I began using stir fry beef in my sheet pan beef fajitas, I started to think about the other flavor profiles I could create around this easy to use protein.  Herbs and lemon are a match made in heaven.

I found this flavorful beef was perfect to pair with gyro flavors.  Picture this – pita, fresh cucumber and tomatoes, feta, olives (if ya like em) and a cooling tztiki sauce.

So good!

What you’ll need for flavorful sheet pan beef gyros

  • stir fry beef
  • avocado oil
  • lemon
  • garlic
  • sea salt
  • dried oregano
  • dried basil
  • dried mint
  • pepper

How to make sheet pan beef gyros

  1. In a large bowl, add the beef. In a small bowl whisk together the avocado oil, lemon juice, sea salt, dried oregano, dried basil, dried mint and pepper. Pour over beef mixture, stir and allow to sit for 30 minutes, and up to 2 hours.
  2. Pre-heat oven to 425 degrees F. Pour beef mixture onto rimmed baking sheet. If the pan is crowded, use 2 pans.
  3. Bake for 15 minutes, or until beef is cooked.
  4. Prepare tzatziki by mixing together the ingredients. Serve beef gyro meat in a pita with tomato, cucumber, feta, red onion, tztaziki sauce and kalamata olive if you enjoy them!

Substitution ideas

  • Instead of beef, use chicken cut into strips
  • Serve over roasted potatoes or couscous
  • Omit the starch all together and turn this into a gyro salad served over a bed of lettuce

Ingredients

  • 1 lb stir fry beef
  • 2 tbsp avocado oil
  • 1/2 lemon, juiced
  • 1 garlic clove, minced
  • 1 tsp sea salt
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried mint
  • 1/2 tsp pepper
  • 4 pita
  • 1 tomato, sliced
  • 3/4 cucumber, sliced (remaining 1/4 of the cucumber is used in the tzatziki sauce)
  • 1/4 cup feta
  • 1/4 cup red onion, sliced
  • 1/4 cup kalamata olives (optional)

Tzatziki Ingredients

  • 1/2 cup plain whole milk yogurt
  • 1/4 cucumber, grated
  • 1 tbsp extra virgin olive oil
  • 1/2 tbsp lemon juice
  • 1 garlic clove, minced
  • 1/4 tsp sea salt
