After I began using stir fry beef strips in my sheet pan beef fajitas, I started to think about the other flavor profiles I could create around this easy-to-use protein. Herbs and lemon are a match made in heaven and work so well together!
I found this flavorful beef was perfect to pair with gyro flavors. Picture this – fresh pitas, crunchy cucumber and juicy tomatoes, feta cheese, olives (if ya like them), and a cooling tzatziki sauce.

How to make sheet pan beef gyros
Step 1: In a large bowl, whisk together the avocado oil, lemon juice, sea salt, dried oregano, dried basil, dried mint, and pepper. Add the beef. Stir and allow it to sit for 5 minutes, or up to 2 hours to marinade.
Step 2: Preheat the oven to 425 degrees F. Pour the beef mixture onto a rimmed baking sheet. If the pan is crowded, use 2 pans.
Step 3: Bake for 15 minutes, or until beef is cooked.
Step 4: Serve beef gyro meat in pita bread with tomato, cucumber, feta, red onion, a small bowl of homemade tzatziki sauce, kalamata olives, and all the desired toppings you love!
How to store
Once any leftover beef has cooled to room temperature, add it to an airtight container and store it in the fridge for up to 1 week.
Reheat in a large skillet until warmed through.
You can also freeze any leftover gyro beef for up to 6 months!

Sheet Pan Beef Gyros
Ingredients
- 1 lb stir fry beef
- 2 tbsp avocado oil
- 1/2 lemon juiced
- 1 garlic clove minced
- 1 tsp sea salt
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried mint
- 1/2 tsp black pepper
- 4 pita
- 1 tomato, sliced
- 3/4 cucumber, sliced (remaining 1/4 of the cucumber is used in the tzatziki sauce)
- 1/4 cup feta
- 1/4 cup red onion, sliced
- 1/4 cup kalamata olives (optional)
Tzatziki Ingredients
- 1/2 cup plain whole milk yogurt
- 1/4 cucumber grated
- 1 tbsp extra virgin olive oil
- 1/2 tbsp lemon juice
- 1 garlic clove minced
- 1/4 tsp sea salt
Instructions
- In a large bowl, add the beef. In a small bowl whisk together the avocado oil, lemon juice, sea salt, dried oregano, dried basil, dried mint and pepper. Pour over beef mixture, stir and allow to sit for 30 minutes, and up to 2 hours.
- Pre-heat oven to 425 degrees F. Pour beef mixture onto rimmed baking sheet. If the pan is crowded, use 2 pans.
- Bake for 15 minutes, or until beef is cooked.
- Prepare tzatziki by mixing together the ingredients. Serve beef gyro meat in a pita with tomato, cucumber, feta, red onion, tztaziki sauce and kalamata olive if you enjoy them!
