Traeger Pork Loin Roast Recipe

  • In a small bowl combine the olive oil, Italian seasoning, sea salt, garlic powder, and pepper.  Using a basting brush, spread the herb mixture all over the large roast.  You can allow the mixture to marinade for up to 2 days, or cook it right away.  If your pork loin has a large bit of silver skin on it, you can cut that off before adding the marinade.
  • When you’re ready to cook your pork loin, turn the Traeger on to smoke and leave the lid open for 5 minutes to start the smoke. Close the lid and set the temperature to 350 degrees F. It will take about 15 minutes to get up to the temperature. Make sure you have enough wood pellets in the pellet smoker to keep the high temperatures.
  • When the electric smoker is up to temperature, place the seasoned pork loin on the grill grates fat side down.  Close the lid and cook for 20 minutes. After 20 minutes, flip the meat over and cook for another 20 minutes. Continue to rotate the pork every 15 minutes until the internal temperature of the pork is at least 145 degrees F.
  • Place the pork on a cutting board and let it rest for 5 minutes covered in aluminum foil.  This is the best way to end with a juicier pork roast!
  • Using a sharp knife, slice the pork and serve!

For more medium-well-cooked pork, remove it from the grill when the internal temperature of the meat gets to 155 degrees F.
