Chicken Stuffe Mini Bel Pepper "Carrots"

Make these high-protein mini carrot peppers as an easy Easter appetizer, or simply enjoy the delicious mini stuffed peppers anytime you want a healthy protein-rich snack! The combination of tzatziki and shredded chicken pairs perfectly with crunchy mini peppers.

  • Mix the feta with the tzatziki dip and then combine with the shredded chicken.
  • Slice the bell peppers in half lengthwise and remove any seeds/membrane.
  • Use a spoon or a piping bag to fill each pepper half with the chicken mixture and add a sprig of dill fronds to complete the carrot look!
