Chicken Stuffed Mini Peppers “Carrots” – High Protein
How cute are these mini stuffed peppers made to look like carrots? All you need are 4 ingredients and the major flavor booster comes from tzatziki sauce mixed with chicken and a little feta cheese!
The dip pairs perfectly with shredded chicken and orange peppers for a high protein, veggie-packed snack or appetizer.
Don’t skip the fresh dill to complete the “carrot” look.

How to make this tasty appetizer
Step 1: Mix the feta with the tzatziki dip and then combine with the shredded chicken.
Step 2: Slice the bell peppers in half lengthwise and remove any seeds/membrane.
Step 3: Use a spoon or a piping bag to fill each pepper half with the chicken mixture and add a sprig of dill fronds to complete the carrot look!

How to store
Store your “mini carrots” in an airtight container in the fridge.
You can also arrange the filled pepper halves nicely on a serving dish and then wrap it tightly with plastic wrap.
They will stay fresh when fully prepped for up to 3 days.
You can also prepare the chicken mixture up to 7 days in advance and then simply wait to stuff the mini peppers until it is time to serve.

Canned chicken – You can swap canned which for home-cooked chicken that you shred at home.
Orange mini peppers – Orange mini peppers complete the “carrot” look, but the recipe will be delicious with mini red or yellow bell peppers as well. Use what you have on hand!
Fresh dill – If you don’t have fresh herbs available, you can also use the actual green tops from carrots to complete the look. You can also use a few thinly sliced lettuce pieces to add greenery to the top.
