In a large bowl, combine the beef, bell pepper slices, and onion. In a small bowl whisk together the lime juice, avocado oil, taco seasoning, and sea salt. Pour over the beef mixture, stir, and allow to sit for 30 minutes, or up to 2 hours.
Preheat the oven to 425 degrees F. Pour the beef mixture onto a rimmed baking sheet. If the pan is crowded, use 2 pans.
Bake for 15 minutes, or until beef is cooked and vegetables are slightly browned. Warm tortillas over medium-high heat in a large skillet.
Serve with warm corn tortillas and your favorite toppings - sour cream, pico de gallo, cheddar cheese, guacamole, cilantro, and lime wedges are all delicious options!
