Kale and Italian Sausage Pizza with Einkorn Crust

  • Preheat oven to 450 degrees F.  Place a baking sheet or pizza stone in the oven to heat up. If your dough has been refrigerated, bring it to room temperature for 1 hour. If your sausage is not already cooked, cook it in a large skillet over medium heat breaking it up into smaller pieces with a wooden spoon as it cooks. Remove the sausage from the pan with a slotted spoon or place it on a paper towel-lined plate to remove excess grease.

  • After 1 hour, roll half of the dough ball out into a 10″ circle on parchment paper or a lightly floured surface using a rolling pin. Roll out the other half as well.

  • To make the pizzas, spread the tomato sauce on the rolled-out dough. Next, add ¼ cup mozzarella to each pizza base. Next, sprinkle the small pieces of cooked sausage on, then the chopped kale, and lastly divide the remaining cheese on top of the pizza.
  • Bake (on parchment paper) in the preheated oven for 10-12 minutes, or until the dough is cooked through, your cheese melts and the edges are golden brown.
