This kale and sausage pizza with einkorn crust gives you traditional pizza flavors, but is made better for you with kale and einkorn! Why not make a delicious kale pizza that also nourishes you? You’ll want to keep this pizza combo on repeat. It’s a crowd favorite!
Preheat oven to 450 degrees F. Place a baking sheet or pizza stone in the oven to heat up. If your dough has been refrigerated, bring it to room temperature for 1 hour. If your sausage is not already cooked, cook it in a large skillet over medium heat breaking it up into smaller pieces with a wooden spoon as it cooks. Remove the sausage from the pan with a slotted spoon or place it on a paper towel-lined plate to remove excess grease.
After 1 hour, roll half of the dough ball out into a 10″ circle on parchment paper or a lightly floured surface using a rolling pin. Roll out the other half as well.
To make the pizzas, spread the tomato sauce on the rolled-out dough. Next, add ¼ cup mozzarella to each pizza base. Next, sprinkle the small pieces of cooked sausage on, then the chopped kale, and lastly divide the remaining cheese on top of the pizza.
Bake (on parchment paper) in the preheated oven for 10-12 minutes, or until the dough is cooked through, your cheese melts and the edges are golden brown.
