Easy 5 Ingredient Homemade Einkorn Pizza Dough Recipe
I always look forward to Friday night pizza with my family.
At the end of a long week, it’s an easy meal everyone is excited about. Some of our favorite toppings include Italian sausage and kale, Canadian bacon and pineapple, and a classic pepperoni pizza (you can’t go wrong with it!).
But doing make-your-own pizzas where everyone gets to choose what goes on their pizza is always a hit. Who doesn’t love to have control of their food? I know my kids do!
I love starting with my own pizza dough and this recipe is one we all love so much! It’s easy to work with and can be made into a big pizza, or also turned into mini pizza bites that are great for lunchboxes.
I’m not a big fan of kneading doughs for a long time, and a bonus of this recipe is it just requires 1 minute of kneading. I can do that!

Einkorn facts
Einkorn wheat is an heirloom ancient grain variety of wheat (one of the oldest variety of wheat grown).
It is grown mostly in Europe and is known for its low gluten content while also having a non-GMO status.
Unlike traditional wheat, Einkorn is a hardy wheat variety that can grow in harsh conditions. The tusks of Einkorn wheat are tighter than those of traditional wheat, and the berries are smaller.
Although Einkorn flour does contain gluten, it has a lower gluten structure than modern wheat flour. This makes it easier for someone with gluten sensitivities to digest!
However, people with Celiac disease or severe gluten allergies should still avoid this ancient wheat since it is not fully gluten-free.
Einkorn has a nutty flavor, is a bit stickier than regular wheat flour (using wet hands can help with sticky dough), and has a slight yellow tinge to the color.

- extra virgin olive oil
- whole plain milk kefir
- warm water

How to make easy einkorn pizza dough
Step 1: In a large bowl combine the einkorn flour, active dry yeast, and sea salt. Add the extra virgin olive oil, kefir, and warm water. Stir until the dough starts to turn into a rough ball. Knead on your work surface for 1 minute rolling into a ball. Place in an oil bowl and roll the ball around until it is coated with oil. Cover with plastic wrap or a slightly wet towel and allow the dough to sit for 1 hour in a warm place.
Step 2: Right away, while the dough is resting, preheat the oven to 450 degrees F. While the oven preheats, place a baking sheet or pizza stone in the oven to heat up. After 1 hour, cut the dough in half. Use a rolling pin to roll the half out into a 10″ circle on parchment paper. Roll out the other half as well.
Step 3: To make the pizzas, spread your pizza sauce on top of the dough, and add toppings of your choice.
Step 4: Bake the pizzas (on parchment paper) for 10-12 minutes, or until the dough is cooked through, your cheese is melted and the edges are golden brown.
How to store
Once your pizza is cooked, any leftovers can be stored in an airtight container once cooled to room temperature.
Pizza will stay fresh for up to 1 week in the fridge.

Can you prepare the dough in advance?
Yes! You can prepare this einkorn pizza crust ahead of time.
Once you mix the dough and allow it to rest for 1 hour, you can place it in the fridge for up to 3 days.
To use the chilled dough, let it sit out at room temperature for 2-3 hours while it warms up before rolling out and turning it into pizza!
You can also freeze the prepared pizza dough! After the rest, add to a freezer bag and freeze it for up to 6 months.
Defrost in the fridge overnight and you’ll be ready to use it the next day!
Substitutions, optional variations & dietary adjustments

All-purpose einkorn flour – You can replace half of the all-purpose einkorn flour with whole grain einkorn flour for a heartier crust recipe.
Active dry yeast – If you are familiar with how to swap yeast for sourdough starter, you can totally do that! The rest time will increase.
Extra virgin olive oil – Avocado oil is a good alternative to use in this recipe.
Plain kefir – Buttermilk and yogurt are both good alternatives to use in place of kefir. If your yogurt is on the thicker side, you may need to add 1-2 extra tablespoons of water.
